- 3 tbs. Olive oil
- 1 tbs. juice from grapefruit
- 1tbs. Snipped fresh chives
- 1 tbs. fresh mint
- 2 cloves garlic, minced
- ¼ cup finely chopped sweet onion
- 2 cup chopped cooked shrimp
- 1 texasweet grapefruit, peeled, segmented, and chopped
- ½ cup diced avocado
- 1 loaf baguette style French bread; sliced
- Freshly ground pepper
Directions
In a medium bowl combine 1 tablespoon of the olive oil, lemon juice, chives, mint and garlic. Add shrimp, onion, chopped grapefruit, and avocado. Toss to coat.
Arrange bread slices on a large baking sheet. Brush with remaining olive oil on one side. Sprinkle lightly with pepper. Broil 3-4 inches from heat for 1-2 minutes per side until golden and toasted.
To serve, spoon shrimp mixture onto the oiled side of each toasted slice. Garnish with mint! Serve immediately.
