  • 3 tbs. Olive oil
  • 1 tbs. juice from grapefruit
  • 1tbs. Snipped fresh chives
  • 1 tbs. fresh mint
  • 2 cloves garlic, minced
  • ¼ cup finely chopped sweet onion
  • 2 cup chopped cooked shrimp
  • 1 texasweet grapefruit, peeled, segmented, and chopped
  • ½ cup diced avocado
  • 1 loaf baguette style French bread; sliced
  • Freshly ground pepper

Directions

In a medium bowl combine 1 tablespoon of the olive oil, lemon juice, chives, mint and garlic. Add shrimp, onion, chopped grapefruit, and avocado. Toss to coat.

Arrange bread slices on a large baking sheet. Brush with remaining olive oil on one side. Sprinkle lightly with pepper. Broil 3-4 inches from heat for 1-2 minutes per side until golden and toasted.

To serve, spoon shrimp mixture onto the oiled side of each toasted slice. Garnish with mint! Serve immediately.
