Sprightly Ruby Grapefruit Salad
- 4 cups torn leaf lettuce
- 1 tablespoon + 2 teaspoons finely chopped fresh mint or 1 teaspoon dried mint
- 1 cup Texas Red Grapefruit sections, drained
- 1/4 cup pecan halves, toasted
- 1/4 cup commercial poppy seed dressing
Combine the first four ingredients in a salad bowl; toss. Add dressing and toss well. Yield: 4 servings.
