Spicy Texas Citrus Toss

  • 3 tablespoons water
  • 3 tablespoons fresh orange juice
  • 1 tablespoon white wine vinegar
  • 1 tablespoon canola oil
  • 1/2 teaspoon ginger
  • 1/8 teaspoon white pepper
  • 1/8 teaspoon ground cumin
  • 1 small clove garlic, crushed
  • 10 cups loosely-packed lettuce (assorted lettuce is optional)
  • 1 cup fresh orange sections - drained
  • 1 cup fresh Texas Red Grapefruit sections - drained
  • 1/4 cup julienne-cut red bell pepper
  • 1/4 cup julienne-cut green bell pepper
  • 1/4 cup thinly sliced yellow onion separated into rings

Combine first 8 ingredients in a jar. Cover tightly, and shake vigorously. Chill 3 hours. Combine torn lettuces with remaining ingredients in a large bowl. Pour vinaigrette over salad; toss gently and serve immediately. Makes 4 servings.
