Spicy Texas Citrus Toss
- 3 tablespoons water
- 3 tablespoons fresh orange juice
- 1 tablespoon white wine vinegar
- 1 tablespoon canola oil
- 1/2 teaspoon ginger
- 1/8 teaspoon white pepper
- 1/8 teaspoon ground cumin
- 1 small clove garlic, crushed
- 10 cups loosely-packed lettuce (assorted lettuce is optional)
- 1 cup fresh orange sections - drained
- 1 cup fresh Texas Red Grapefruit sections - drained
- 1/4 cup julienne-cut red bell pepper
- 1/4 cup julienne-cut green bell pepper
- 1/4 cup thinly sliced yellow onion separated into rings
Combine first 8 ingredients in a jar. Cover tightly, and shake vigorously. Chill 3 hours. Combine torn lettuces with remaining ingredients in a large bowl. Pour vinaigrette over salad; toss gently and serve immediately. Makes 4 servings.
