Texas (Favorite) Grapefruit Pie
- 9" baked pie shell
- 32 large marshmallows
- 1/2 cup grapefruit juice
- 1 cup Cool Whip
- 2 1/2 cups Texas Red Grapefruit sections
- 1/4 cup coconut, shredded
Cut marshmallow in quarters. Melt them in 1/4 cup grapefruit juice. Cool to room temperature. Add remaining 1/4 cup juice to sections. Fold cooled marshmallows, grapefruit sections and Cool Whip together. Pour into cooled pie shell. Allow to set in refrigerator. Sprinkle coconut over pie just before serving.
