Ruby Red Magic Pie w/ Macaroon Cookies

  • 2 to 3 Texas Red Grapefruit
  • 1 tablespoon unflavored gelatin
  • ¼ cup sugar
  • 1 pint strawberry flavored lowfat yogurt
  • 10 coconut macaroon cookies (2-½ inch)
  • whipped topping in aerosol can (optional)

Halve grapefruit. Loosen and remove sections using curved grapefruit knife or grapefruit spoon. Squeeze remaining juice from shells. Measure 2 cups sections and juice. Pour off ½ cup of the juice into small saucepan. Stir in gelatin and sugar; then dissolve over low heat. In bowl, stir yogurt to blend. Stir in grapefruit and gelatin mixture. Chill until mixture mounds on spoon. Meanwhile, arrange 5 cookies on bottom of 9 inch pie plate. Arrange remaining cookies, broken in half, around edge of pie plate, rounded edge up. Pour thickened filling into cookie crust. Chill until firm. At serving time, pipe whipped cream around edge. Cut into wedges. Makes 10 servings.
