Citrus Jam

  • 4 Texas Red Grapefruit
  • 2 Texas Oranges
  • 2 lemons
  • 6 1/2 cups sugar
  • 2 (3 ounce) pouches liquid pectin

Section Texas Red Grapefruit, Texas Oranges, and lemons. Process in a food processor until lumps the size of a marble are still visible. (Make 4 cups prepared fruit.) Combine fruit and sugar and bring to a boil for 2 minutes. Remove from heat and quickly skim off any foam. Stir in liquid pectin. Ladle into hot, sterilized jars. Cover with lids and rings. Process in boiling water for 5 minutes to seal. Makes 7 or 8 half pint jars.
